Garden-fresh carrots and local maple syrup come together in this easy, comforting side dish that’s both kid-friendly and crowd-pleasing. It’s one of those recipes that feels right at home on a busy weeknight, yet special enough for a family gathering — especially when the carrots are pulled straight from the garden.

This dish has become a favourite around our table because it celebrates simple ingredients and lets them shine. Sweet, tender carrots, rich maple syrup, and a touch of butter create a flavour that feels familiar and comforting, while still highlighting what’s growing close to home. It’s a gentle reminder that some of the best meals don’t need to be complicated just fresh, thoughtful, and shared.


Ingredients

1 1/2 pounds fresh-from-the-garden carrots, peeled and sliced (or baby carrots)
2 tablespoons butter (up to 2 tablespoons more, if you please)
1/3 cup local maple syrup
Salt and pepper to taste
1 lemon, freshly squeezed, drizzled just before serving (optional)
1/2 cup dried cranberries (optional)
Fresh rosemary, to garnish (optional)

Instructions

Carrots

Place carrots into a pot and cover with salted water. Bring to a boil.
Reduce heat to medium-low and simmer until tender.
Drain and transfer carrots to a serving bowl.

Syrup

While the carrots are cooking, melt butter in a saucepan over medium-low heat.
Stir maple syrup into the melted butter and warm for 1 to 2 minutes.
Once carrots are cooked, pour the butter and maple syrup mixture over them and toss gently to coat. Season with salt and pepper. Add lemon juice and cranberries if using — both are optional and so good.
Garnish with fresh rosemary if desired.

This is one of those dishes that disappears quickly, often with requests for seconds. It pairs beautifully with roasted meats, holiday meals, or simply as a way to make everyday vegetables feel a little more special.
