Ingredients

Soup

2 pounds carrots, peeled and sliced
2 tablespoons fresh ginger, peeled and finely chopped
2 tablespoons butter
2 sweet yellow onions, chopped
4 cups chicken broth
1/2 cup half-and-half cream
Salt and pepper to taste
Sour cream or yogurt, for serving
1 medium sweet potato, peeled and chopped (optional)
Thinly sliced green onions, for topping (optional)

Instructions

In a large pot over medium-high heat, melt the butter and add the onions. Cook, stirring frequently, until the onions are soft and translucent, about 5 minutes.

Add the broth, carrots, and ginger (along with the sweet potato, if using). Cover and bring to a boil. Reduce heat and simmer until the carrots are very tender, approximately 15 to 20 minutes.

Puree the soup until smooth using an immersion blender, or carefully transfer the soup in batches to a blender and return it to the pot.

Stir in the half-and-half and warm gently over medium heat until heated through. Season with salt and pepper to taste.

Serve hot, topped with thinly sliced green onions and a small spoonful of sour cream or yogurt.

This soup freezes beautifully and makes a perfect make-ahead meal, ready to be enjoyed whenever you need something comforting and homemade.
